Easy, make ahead meatballs that can be used in a variety of recipes. As always, it’s important with AIP to check your quality of meat. Grass-fed, free range, no antibiotics or hormones…..we have enough to deal with, we don’t need extra. :D

Here's what you’ll need:

  • Ground Turkey - 93% Lean, 16 oz

  • Green Onion - One bundle, about 6 stalks, thin sliced.

  • Minced Garlic - 2 TBSP

  • Fresh Dill - 2 TBSP Chopped

  • Bone Broth - 1/2 Cup

  • Olive Oil, Salt, Garlic Powder.

In a dry pan add the minced garlic, 1TBSP fresh dill, sliced green onion and a little drizzle of olive oil. Stir frequently until garlic starts to brown then pour over raw turkey. Place pan back on the stove and add in the bone broth. Keep on low medium heat and stir in all the yummies from the pan into the broth. Now, back to the turkey! Sprinkle a thin layer of salt and garlic powder over the ground mix. Dive in with clean hands, don’t be scared! Start forming into balls by rolling around in your palm and set back into the fry pan. Keep the broth at a low boil and move the meatballs around every few minutes to cook thoroughly. That’s it! You can use these in all kinds of recipes!

To complete the Meatball Soup take cooked sweet potato noodles, bone broth, chopped leeks and meatballs. Combine in a pot and heat! So tasty, the broth keeps very well for a next day meal.
